We just couldn't resist this fabulous looking creation from Ant @cocktails_for_breakfast ! Colonsay Island Paradise Gin cocktail is worth making just for the insane garnish don't you think!? It's name is also very appropriate, seeing as we live on the beautiful island of Colonsay, although we're struggling to find palm trees! Just have to settle for all the exotic flora and fauna in Colonsay House gardens instead!

This is not the type of drink you'd normally associate with Scottish gin, but there are plenty of Tiki drinks that use gin as their base, so we figured, why not! We're using our Navy Strength Colonsay Gin - Tonn Mor for this one as its 57% ABV packs enough of a punch to hold its own against the classic Tiki sweet and tart flavours. The added Arancione Aperitivo further boosts the citrus as well as adding some extra botanical notes and a slight hint of bitterness for balance.

Ingredients and Method:

45ml Colonsay Gin - Tonn Mor

15ml Arancione Aperitivo

15ml Monin Passion Fruit Syrup

30ml Lime Juice

30ml Pineapple Juice

Shake all ingredients over ice until well chilled, then fine strain into a goblet filled with crushed ice. Garnish with a lime wheel and some 'palm trees' made from cinnamon sticks and fresh mint leaves.
